When I started my recent journey into gluten free eating (based on a gluten intolerance), I thought bread was off my menu forever. I avoided whole grains, like wheat and bran, which meant giving up sandwich bread, biscuits, muffins, cereal and other similar baked goods. For my health, it was the best choice, but oh, did I miss some favorite foods (sandwiches, pizza, muffins, toast, cookies, cereal, hamburgers with buns).
After three months, I decided to search for gluten free recipes. It turned out that the recipes required many different types of flours and ingredients, which would be very costly.
I ditched the idea of homemade bread and purchased frozen bread from popular gluten free companies. It's an expensive option, but when you really want bread, it will have to do.
My husband, our household chef, searched for bread recipes and found the same dilemma (though the cost of buying multiple ingredients would be cheaper over time, it was expensive at the outset). Make gluten free sandwich bread in your oven
We choose a mix because all the different flours would be included in the box. A mix saves on buying several types of flours to create moist, tasty bread. Sandwich bread seemed a good place to start with our journey in the Gluten Free Pantry mix brand.
This bread mix is gluten and wheat free. It contains milk and may contain traces of soy, so avoid this mix if those ingredients are a problem for you.
The mix uses white rice flour and brown rice flour. It also contains potato starch, skim milk, whey, corn starch, brown sugar, guar gum, and salt. It will make 20 servings; each serving is 110 calories. It also has 0 mg cholesterol, plus 0 g saturated fat, and 0 g trans fat.
There are two bags inside the box: a yeast packet and a bag including the flours and other dry ingredients listed above.
The recipe calls for basic ingredients we had on hand. To bake, you can use a gluten free bread machine, or your own oven. We chose the latter method.
Here are the additional ingredients to add to the mix:
1 3/4 cups of lukewarm milk
2 large eggs
4 TBSP of butter
1 TSP of honey (my husband added this ingredient; it isn't a listed ingredient)
Like all bread recipes, this one takes time to rise. After mixing the dry and wet ingredients, you set the loaf in a warm place to rise, around 30 to 40 minutes.
When it rises to the top of the pan, it's time to put it in the oven. Bake at 375 degrees F for 30 minutes.
Take a look at the loaf on the mix cover. Ours turned out similar.
When the bread finished, my reaction was "Wow"! The top was golden. And it smelled heavenly! We let it cool a little before slicing. The crust was thick; the texture a little denser than the typical white, gluten-filled bread. Finally, a tasty and EASY homemade bread that's Gluten Free! I was overjoyed.
It tasted delicious! The slices had a nice texture and flavor without a funny aftertaste that can occur with some gluten free foods. Since it was denser than than the usual white sandwich bread, it was delicious as a slice of tasty bread (with butter) alongside dinner.
Homemade bread is hard to resist when the aroma spreads throughout the kitchen. Our teen son tried the bread too - plain slices and another piece buttered. He loved it!
This was our first attempt, and we're raving about this gluten free mix. Of course, I had to share our experience with you!
Important Note: Once you enjoy the hot from the oven slices of bread, be sure to slice the remaining loaf and freeze left overs. It's not the same as the gluten-filled loafs and can't sit on your kitchen counter, but freezing will keep your bread fresh when you want it.
I love taking a frozen slice (or two for sandwiches) and toasting it in our toaster oven. On a medium setting, it's a warm slice of bread; a heavier setting will actually toast it.
